This homemade Sourdough Skillet Cottage Pie is something that I whipped up real quick one day because I was trying to use some of my discard and I did not have any potatoes in the house. What’s the difference between a shepherds pie and a cottage pie?

Shepherds Pie is made with lamb while a Cottage Pie can be made from a variety of meats, however mostly beef.

What are some side dishes of cottage pie?

  • Dinner Rolls
  • Garlic Bread
  • Spring Salad with light vinaigrette
  • Garlic and Lemon green beans
  • Roasted Brocolli
  • Or Nothing (which is what my son prefers, he says it has all the veggies we need inside)

Ingredients

  • 2 cups sourdough discard
  • 1 lb of lean ground beef
  • 12 oz bag peas, corn and carrots (frozen)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mozzarella cheese (top before sourdough discard)
  • ½ cup Mexican shredded cheddar cheese to top the sourdough discard
  • ½ tsp paprika
  • ¼ tsp turmeric
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ⅛ tsp cayenne pepper, optional
  • ??oz can tomato paste
  • 2 tbsp chicken broth
  • ¼ tsp salt (to taste)

Instructions

  1. Prep time: 10 minutes
  2. Over medium heat, brown ground beef, in a cast iron skillet approximately 5 minutes
  3. In a medium sized oven safe pan, I am using my Le Creuset braiser,add the meat
  4. Allow to cook about 2 minutes, separate the beef into smaller portions in pan.
  5. Add the fresh onion and garlic, combine and continue browning. 3 minutes
  6. Add all seasonings; paprika, turmeric, onion powder, garlic powder, cayenne pepper and combine.
  7. Add mixed vegetables of frozen peas, frozen corn, carrots bag and combine.
  8. Add tomato paste and combine. Allow to cook for about 3 to 5 minutes
  9. While the meat mixture is cooking measure your sourdough discard.
  10. Mix and spread out evenly in pan
  11. Top with mozzarella cheese
  12. Then top with sourdough discard
  13. Cover the discard with Mexican cheese
  14. Place uncovered in a 350 degree Fahrenheit oven for 35 to 40 minutes or until golden brown
  15. While the shepherd’s pie is in the oven and beginning to cook the mixed veggies and sourdough focaccia, you can begin to prepare the rest of the food while the cottage pie is baking. We like to add a nice side salad with tomato, onion and light vinaigrette

Let’s Make It!

Over medium heat,brown ground beef, approximately 5 minutes

Allow to cook about 2 minutes, separate the beef into smaller portions in pan.

Combine all seasonings; paprika, turmeric, onion powder, garlic powder, cayenne pepper and combine.
Toss in mixed vegetables of frozen peas, corn, carrots bag and combine.
Add tomato paste and combine. Allow to cook for about 3 to 5 minutes

While the meat mixture is cooking measure your sourdough discard.

Mix and spread out evenly in pan
Top with mozzarella cheese

Then top with sourdough discard (I am using unfed sourdough starter discard)

Cover the discard with Mexican cheese

Place uncovered in a 350 degree Fahrenheit oven for 35 to 40 minutes

While the shepherd’s pie is in the oven and beginning to cook the mixed veggies and sourdough discard you can begin to prepare the rest of the food while the cottage pie is baking. We like to add a nice side salad with tomato, onion and light vinaigrette

Can Le Creuset Go In Oven?

Yes, you can absolutely put your Le Creuset cast iron in the oven since they are oven-safe. Notes

You can double the amount of sourdough discard if you would like more of a topping. But add an additional 5 to 10 minutes to your baking time. And check it for doneness.
